Located in a former adhesives factory set among a warehouse-rich industrial area in Minneapolis, USA, the external ambience certainly seems less than inviting. Step inside, however, and one is treated to the spicy tinge of jalapeño peppers in the air, tinkering sounds of pots and pans and a stylish, contemporary Mexican restaurant. Helmed by Chef Jose Alacron and Chef Jami Olson, Popul Vuh is the fancier sibling of taco shop, Centro. In the kitchen, the art of fire cooking coupled with a refined, upscale spin to common foods the likes of ceviche, jicama salad and carne asada, make for a never-before-encountered, but very welcome, twist on Mexican cuisine.
